Bringing Barbados to you…
Are you missing The Beach Club and its exquiste menu? Well you’re in luck, as we continue to share our favourite recipes with you all; why not give cooking fine Bajan cuisine from the comfort of your own home a go?
This weeks recipes are mouth watering Shrimp Pasta washed downed with a delicious Golden Mojito.
What you’ll need –
Golden Mojito
• 2 oz Mount Gay Eclipse Rum
• 1 ½ oz Simple Syrup
• 1 ½ oz Fresh lime juice
• 8 fresh mint leaves
• 2 strawberries
• Canada Dry ginger ale
Shrimp Pasta (One Serving)
• 150 g Pasta (elbows)
• 5 Jumbo Shrimp
• 1 cups Cooking cream(Elle & Vire)
• ½ cup of green peas
• 1 tsp Blackened spice
• ½ oz Fresh Lime juice
• 1 lime
• 1/2 tsp salt
• 1/2 tsp black pepper
• 1 tbsp Olive oil
• 1/2 pack grated Parmesan cheese
How to make the Shrimp dish and accompanying cocktail –
Golden Mojito –
Place 8 fresh mint leaves into shaker and gently muddle. Then add your Rum, syrup, lime juice, strawberries and ice into the shaker and shake vigorously for 30 seconds. To serve pour all of the ingredients from the shaker into a tall glass and top up with Canada dry ginger ale. Finalise with a garnish of a mint head and a slice of strawberry. Sit back, relax and enjoy…
Shrimp Pasta –
To begin, place 150g of pasta (elbows) alongside two cups of boiling water and a pinch of salt into a medium size pan. Bring to the boil then leave the pasta cooking for ten minutes, once the pasta is cooked drain it into a colander and allow to cool; please do not cool the pasta off with cold water, simply drizzle in an oil of your choice.
Whilst cooking your pasta, marinate your shrimps in blackened spice, lemon juice including zest and salt and pepper. Once your shrimps are marinating, you can begin to make your accompanying sauce. Add two cups of heavy cooking cream (Elle & Vire) into a preheated frying pan bring it to a boil and then add your pasta, peas, grated parmesan cheese and salt and pepper. Whilst leaving this on a low heat to simmer, prepare to book your cooks by preheating a nonstick pan on a medium heat. Once your pan is to heat, place your marinated shrimps into the pan alongside a tablespoon of olive oil; cook for 5 minutes.
To serve, plate your pasta first and then carefully place your shrimps on top to finish.

Improve your golf – Perfect your game with Bill Longmuir.
Few people can claim to know the Championship golf course as well as resident professional Bill Longmuir. It was at Royal Westmoreland that Bill won the 2008 DGM Barbados Open on the Senior Tour with a scintillating final round of 65! Continuing his series of tips, Bill talks us through one of the trickiest holes on the course – the renowned Par 3, 15th hole.

Strangest request from guests – Haven’t really gotten any strange requests at the moment, but I am sure there will be some when guests return!
Your recommendation for someone to experience the ‘Best of Barbados’:
• A Villa or Apartment at Royal Westmoreland.
• If you are a golfer we have the best golf course on island.
• Restaurants, in my opinion ‘The Cliff’ is the most sought after table reservation for the best location, food, service and ambiance.
• A trip to the northern part of the island, namely the animal flower cave and a light lunch. Then a drive to the east coast, taking in a rum tour of St Nicholas Abbey on the way.
• Travel along the East coast to Bathsheba to experience the rustic, unspoilt Barbados. The drive is very scenic and calming. For a little more natural beauty, head to Harrison’s Cave, located in the centre of the island, for a short tour.
• Limegrove Lifestyle Centre, Holetown for the best of fashion, cinema, shopping, dining and entertainment.
• And of course every Friday evening the world famous Oistins Fish Fry.
